A bright sun in a dream is consciousness and clarity. A rising sun is the start of a phase; a setting sun is the close of one. A sun obscured by clouds is the awareness that you have temporarily lost access to your own clarity, often because you are in the middle of something emotionally demanding.
Multiple suns or a sun behaving strangely (eclipses, color changes) is the dream noting that something you took to be a constant in your life has shifted.
